An immensely popular flavored cheese in the central Pennsylvania area is Goot Essa Mountain Home Woodsmoked Cheddar. This hand-made, raw cow milk cheese is produced from an original German-Swiss traditional recipe taken directly from our Amish heritage. This cheese is a completely hand-made white cheddar with a well-rounded sharpness and a deep cheddar flavor coupled with a hickory smoked flavor. Mountain Home Woodsmoked Cheddar is produced in 5 lb loaves for consistent smoking and aged about 6 months. The wood smoke taste is enhanced by a dry, semi-hard texture which imparts a sharp bite and lingering finish.
Our locally produced Mountain Home Woodsmoked Cheddar is great in carbonara sauces, soups, and mixed into cheese logs. This cheese enhances the flavor of grilled red meats and various stone fruits. Spicy brown mustard, garlic bread, and earthy jams bring out a complex blend of flavors from this cheese. Mountain Home Woodsmoked Cheddar also pairs well with fruity white wines and full bodied, smokey red wines as well as most hearty pilsners and pale ales. This cheese promotes easy entertaining: just put out a block of Woodsmoked Cheddar, some crackers, and let your guests help themselves.
The milk for this cheese is produced on the Esh family farm located in the Nittany Valley of central Pennsylvania. The Eshes are proud of both their farmstead and the care that they give each individual animal. A large emphasis is put on cow comfort and providing a natural environment for their animals.
